Trim any extra fat off the chicken breasts or thighs to get clean pieces. Then, pat dry with a paper towel.
Pour 1 cup of pickle juice into a bowl or zip-top bag. This juice acts as the base of your marinade, adding tangy flavor and acidity that helps tenderize the chicken.
Add 1 to 2 tablespoons of olive oil to the pickle juice. This adds a touch of richness to balance the acidity and helps keep the chicken moist and flavorful during cooking.
Add 1 teaspoon of garlic powder and ½ teaspoon of black pepper to the mixture for extra flavor. For a bit of sweetness, you can add a teaspoon of honey.
Whisk the ingredients in the bowl until everything is well combined. Mixing thoroughly ensures the flavors are evenly blended.
