This 4-ingredient pasta salad is foolproof. It's so simple and delicious, it borders on magical.
With just a handful of simple ingredients, it delivers the kind of flavor and freshness that feels almost too good to be true. Here's a guide on how to make it.
8 oz (about 2 1/2 cups) pasta – rotini or penne work great 1 cup cherry tomatoes, halved 1 cup mozzarella pearls (or cubed fresh mozzarella) 1/2 cup pesto
If you don’t have pesto, you can make a quick homemade version by blending fresh basil, garlic, Parmesan, olive oil and nuts.
Cook the pasta according to package directions until al dente. Rinse and drain under cold water until cooled.
In a large bowl, combine the tomatoes, mozzarella, pasta and pesto. Toss until everything is evenly coated.
Allow the salad to chill in the fridge for 30 minutes before serving. This gives the ingredients time to meld, making the flavors more vibrant and delicious!
If you're feeling fancy you can add in basil, black pepper or a blasmaic glaze.
For extra protein, you can add in chicken, tofu, chickpeas or shrimp.
