Birria tacos have become widely popular in the culinary world. Mostly for their expansive flavor, which comes from slow cooking meat and letting it simmer with all the herbs and spices.
You can make a simplistic version of this intensely laboured dish that is just as good quality-wise. Here is a beginner friendly birria tacos recipe that is still delicious.
2lbs beef chuck roast or short ribs 6 dried guajillo chilies (stems and seeds removed) 2 dried ancho chilies (stems and seeds removed)
4 cloves garlic 1 medium onion (quartered) 1 cup crushed tomatoes 2 cups beef broth 1 tsp ground cumin 1 tsp smoked paprika
2 bay leaves Salt and pepper (to taste) Corn tortillas 1 cup cotija cheese (optional) Fresh cilantro Sliced onion for garnish
Toast chilies in a skillet, then soak in hot water for ten minutes. Blend with garlic, onion, tomatoes and one cup of broth.
Season beef with salt and pepper and sear until browned. Add chili sauce, remaining broth, spices and bay leaves. Simmer covered for 2-3 hours until tender.
Shred the beef then set it aside. Save the cooking liquid for dipping.
Dip tortillas in the cooking liquid, then fill with meat and cheese. Fold and cook in a skillet until crispy.
Top with cilantro and onions. Serve with the reserved broth for dipping.
