Chilaquiles are a beloved dish in Mexican cuisine. Follow this step-by-step guide to create a mouthwatering batch of chilaquiles in your own kitchen.
Chilaquiles are a traditional Mexican dish made with fried tortilla chips, salsa, and toppings such as cheese, eggs, and beans.
Chilaquiles are surprisingly easy to make. Wtith just a few simple ingredients you might already have at home and our easy guide, you'll have no problem.
Gather tortillas (corn or flour), eggs, salsa verde or roja, onion, garlic and cheese (queso fresco or shredded cheese like Monterrey Jack).
Cut the tortillas into quarters or strips. Fry them in oil until crispy, then drain excess oil on paper towels. You can also use store bought.
In the same pan that you fried to tortillas, sauté chopped onions and minced garlic until softened and fragrant.
Add salsa verde or roja (homemade or store-bought) to the pan and simmer for a few minutes until heated through.
Once the sauce is ready, add the fried tortilla chips to the pan. Gently toss them until they are well-coated with the sauce.
Allow the chilaquiles to simmer for a few minutes, stirring occasionally, until the tortillas absorb some of the sauce and soften slightly.
Sprinkle grated cheese over the top of the chilaquiles. Cover the pan and let it sit for a couple of minutes until the cheese melts.
Transfer the chilaquiles to serving plates. Top them with sliced avocado, chopped cilantro, and any other desired toppings and enjoy.
