As delicious as Starbucks' pumpkin loaf is, not everyone can afford to spend on a sweet treat every day. Here's a recipe you can make at home to satisfy seasonal cravings.
You’ll need pumpkin puree, flour, sugar, eggs, oil, baking soda, spices (cinnamon, nutmeg, cloves), vanilla extract and pumpkin seeds for garnish.
Set your oven to 350°F (175°C). Greasing your loaf pan or lining it with parchment paper will make it easy to remove the loaf once baked.
In a large mixing bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg and cloves. This ensures even distribution of the spices.
In a separate bowl, mix the sugar, oil and eggs until well combined. Stir in the pumpkin puree and vanilla extract, blending until smooth.
Slowly pour the dry ingredients into the wet mixture, stirring gently until just combined. Avoid over-mixing, as it can make the loaf dense.
Pour the batter into the prepared loaf pan. Use a spatula to spread it evenly, ensuring it reaches all corners.
Place the pan in the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the loaf cool in the pan for about 10 minutes.
After cooling slightly in the pan, transfer the loaf to cool completely. Slice and enjoy! The loaf can be stored in an airtight container for up to 5 days.
