1 cup cornmeal, 1 cup all-purpose flour, 1 tsp baking powder, 2 tbsp sugar, 1 tsp salt, 1 cup buttermilk, 1 large egg, 2 tbsp melted butter and oil for frying.
In a large bowl, whisk together the cornmeal, flour, baking powder, sugar and salt. Make sure the dry ingredients are evenly mixed before adding the wet ones.
To the dry ingredients, add the buttermilk, egg and melted butter. Stir until just combined, but be careful not to overmix.
Heat about 2-3 inches of oil in a deep skillet or frying pan over medium-high heat.
Using a spoon or cookie scoop, carefully drop spoonfuls of the cornbread batter into the hot oil.
Fry the fritters for about 3-4 minutes per side or until they are golden brown and crispy on the outside.
Be sure to drain any excess oil from your fritters before getting them ready to serve!
