Keto is a popular diet that focuses on consuming low-carb meals. By reducing carbohydrates, the body is able to burn fat faster, increasing energy and improving brain function.
No-bake desserts require less time to prepare while making it easier to track what you consume. These keto no bake cookies combine mindful eating and ease.
1/2 cup unsweetened peanut butter 1/4 cup of coconut oil 2 tbsp unsweetened cocoa powder 1/4 cup of stevia 1 tsp vanilla extract 1/2 cup almond or coconut flour Lite salt
In a saucepan (on low heat), combine the peanut butter, coconut oil and cocoa powder. Stir until smooth before adding in the stevia. Stir until smooth again.
Add the almond or coconut flour to your flavor base before adding salt to taste. You can also mix in coconut for flavor and texture although not required. Combine until the dough thickens.
Using your hands or a spoon, scoop small amounts of your batter out of the saucepan. Form your cookies: they can be round mounds or round and flat.
Plate your cookies on a tray. To avoid sticking, bakers recommend laying down a sheet of parchment paper on the tray first. Refrigerate for 30 minutes and enjoy!
Like the shredded coconut, other ingredients can be added according to your taste preferences. Consider walnuts, pecans, sugar-free or vegan chocolate chips.
Bakers and enjoy-ers of these keto no bake cookies can celebrate that there are healthy and unhealthy fats. These cookies can have approximately 20% of calories from protein and 80% of calories from fat.
Though beneficial, the keto diet is known to cause a metallic taste in the mouth of dieters. Water, however, can help with the taste and any odor side effects, as can avocado.
