Here is a way to enjoy the flavor of a signature fall pumpkin pie in a way that's much healthier and easier to prepare.
Only six ingredients are needed for the recipe. The steps are as simple as gathering ingredients, mixing them and letting sit in the fridge until ready to enjoy.
Think you can handle making this 6-ingredient pumpkin chia pudding recipe?
1 cup almond milk (or any milk of your choice) 1/2 cup pumpkin puree 1/4 cup chia seeds
2 tbsp maple syrup (or sweetener of choice) 1 tsp vanilla extract 1/2 tsp pumpkin pie spice (or a mix of cinnamon, nutmeg and ginger)
1. In a mixing bowl, whisk together the almond milk, pumpkin puree, maple syrup, vanilla extract and pumpkin pie spice until smooth.
2. Stir in the chia seeds, making sure they are well combined.
3. Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to thicken and absorb the liquid.
4. Before serving, give the pudding a good stir to ensure it's evenly mixed.
5. Serve chilled, topped with your favorite toppings like granola, nuts, whipped cream or coconut flakes if desired.
