A watermelon radish salad is a fresh way to show off the pink and green hues of watermelon radish. The vegetable gets its name from its resemblance to the beloved fruit.
Here’s a simple, refreshing recipe that balances the peppery taste of the radish with citrus and sweet flavors.
2-3 watermelon radishes, thinly sliced (use a mandoline for best results), 4 cups mixed greens and 1 small cucumber, thinly sliced
1 small sliced avocado, 1/4 cup crumbled feta cheese and fresh herbs like chopped mint, basil or parsley.
1/4 cup olive oil, 2 tbsp fresh lemon/lime juice, 1 tbsp fresh orange juice (optional), 1 tsp Dijon mustard, 1 tsp honey or maple syrup and salt and pepper (to taste).
Thinly slice watermelon radishes. You can leave the skin on, but be sure to wash them thoroughly. If using a mandoline, set it to a thin setting to achieve even slices.
In a small bowl or jar, whisk together olive oil, lemon juice, orange juice, Dijon mustard, honey, salt and pepper until well combined. Adjust the sweetness or acidity to taste.
In a large salad bowl, toss the mixed greens with the cucumber, avocado and watermelon radish slices.
Drizzle citrus vinaigrette over the salad and gently toss everything together until the dressing evenly coats the greens and vegetables.
Sprinkle the crumbled feta and fresh herbs over the salad. Add more black pepper or a squeeze of lemon juice for extra brightness.
Serve immediately as a light lunch or side dish. Enjoy the vibrant colors and fresh, crisp flavors.
For crunch, add toasted nuts like almonds, walnuts or sunflower seeds. For a more filling salad, top with grilled chicken, salmon or chickpeas.
