Watermelon salad is a perfect dish – refreshing, hydrating and full of flavor.
Follow these simple steps to create a delicious and visually appealing watermelon salad.
Start by cutting the watermelon. Slice off both ends, then stand on one end and cut into bite-sized cubes.
Thinly slice half a cucumber. To mellow the flavor, you can soak the slices in cold water for about 10 minutes, then drain and pat them dry.
Using a fork, crumble the feta cheese into small pieces and set aside. Feta adds a creamy, tangy flavor that pairs beautifully with the sweet watermelon.
Wash fresh mint leaves and gently pat them dry. Remove the leaves from the stems and roughly chop them.
In a small bowl, whisk together 1/4 cup of olive oil and 2 tablespoons of lime juice. Season with salt and pepper to taste.
In a large bowl, combine the watermelon cubes, cucumber, feta and chopped mint leaves. Drizzle the dressing over top.
Toss together then transfer the salad to a serving platter or individual bowls. For an extra touch, garnish with a few whole mint leaves. Serve cold!
