4-Ingredient Potato Soup Recipe
Prepare the Ingredients
Peel and dice the potatoes into small, even-sized cubes to ensure they cook evenly. Chop the onion into small pieces.
Cook the Soup
In a large pot, combine the diced potatoes, chopped onion, and broth. Bring to a boil over medium-high heat. Once boiling, reduce the heat to a simmer and cover the pot. Cook for about 15-20 minutes or until the potatoes are tender and can be easily pierced with a fork.
Blend the Soup
Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup to a countertop blender in batches and blend until smooth. Return the soup to the pot.
Add Milk and Season
Stir in the milk or heavy cream and heat the soup gently over low heat. Do not let it boil. Season with salt and pepper to taste. Feel free to add additional seasonings like garlic powder or thyme for extra flavor.
Serve
Ladle the soup into bowls and serve hot. You can garnish with chopped chives, shredded cheese, or crispy bacon bits!
