Every year, Americans eagerly await the arrival of Girl Scout cookies season, bringing with it an irresistible lineup of options. Besides satisfying buyers with their delicious flavors, these sweet treats are a cornerstone of fundraising for the organization and have been for over 100 years. What began as a modest home-baking experiment to fund troop activities has grown into a nationwide phenomenon, raising millions of dollars to support leadership development and community programs for young girls.
Along the way, Girl Scout cookies have mirrored societal changes, from evolving recipes to shifts in manufacturing and marketing strategies. Sadly, not every flavor of Girl Scout Cookies will be available after the 2025 calendar year – both S’mores and Toast Yay are reaching their final days of production. As disappointing as this news is for sweet tooths, they’ll be happy to know they can make their own version at home following the recipes below.
Copycat Girl Scout S’mores Cookies
This delicious 3-ingredient recipe comes from Stress Baking, but we can assure you that whipping up a batch will bring you nothing but joy.
Ingredients:
- 6 sheets graham crackers, broken in half (12 squares total)
- 1 cup marshmallow fluff (not marshmallow creme)
- 10 oz chocolate melting wafers (can substitute chocolate almond bark, chopped chocolate or chocolate chips)
Instructions:
- Cover a baking sheet with parchment paper or a nonstick silicone mat.
- Lay out half of your graham crackers and set the rest aside.
- Drop 1 tbsp marshmallow fluff on the middle of each graham cracker then top with the other half and lightly press down.
- In a microwave-safe bowl, heat chocolate in 30-second increments, stirring after each, until melted and smooth.
- Use a candy dipper or fork to submerge each graham cracker sandwich into melted chocolate until completely coated.
- Transfer coated girl scout cookies back to parchment paper. Place in the fridge for 10 minutes to cool and set.
DIY Toast Yay Girl Scout Cookies
This copycat recipe from The Spruce Eats takes a bit longer to make, but fans of the Toast Yay! flavor will be grateful for it after the cookies disappear from shelves. Make sure to buy a toast-shaped cookie cutter before baking your own at home!
Ingredients:
- 3/4 cup powdered sugar
- 2 1/2 cups all-purpose flour
- 1 tsp ground cinnamon
- 2 tbsp maple syrup
- 1/4 tsp maple extract
- 1 cup salted butter (cubed)
- 1/4 cup heavy cream
- 1/4 tsp baking soda
- 10 oz white melting candy wafers (for glaze)
Instructions:
- Preheat over to 350F and gather your ingredients for these delicious girl scout cookies.
- Add butter, confectioners’ sugar, flour, cinnamon, baking soda, maple syrup, maple extract and heavy cream to a bowl before mixing.
- Beat together with a paddle attachment until ingredients combine into a slightly stiff dough that pulls away from the sides of the bowl.
- Place the ball of dough onto a piece of plastic wrap, cover and chill for at least 30 minutes.
- On a lightly floured surface, roll out the dough into a large sheet.
- Use a toast-shaped cookie cutter to cut dough.
- Place the cookies on a parchment-lined baking sheet. Bake for 10-12 minutes or until lightly golden and firm. Remove from oven and allow to cool.
- While cooling, place the white chocolate in a heatproof bowl. Melt at 15-second increments in the microwave. stirring between each.
- Dip the bottom of each cooled cookie into the white chocolate, shaking off any excess.
- Flip the cookie and place on a parchment-lined baking sheet or cooling rack. Set aside to harden.
- Serve with a cup of coffee or tea and enjoy!
