Banana Bread
Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
¾ cup brown sugar
½ cup butter
2 large eggs, beaten
2 ⅓ cups mashed overripe bananas
Instructions
Preheat oven to 350°F.
Lightly grease your baking pan.
Add flour, baking soda, and salt to a large bowl.
Add brown sugar and butter to a separate bowl and beat until smooth.
Add eggs and mashed bananas to the butter and sugar mixture and stir.
Add the dry mixture to the wet mixture and stir until combined.
Pour the batter into the pan and place in the oven.
Bake for an hour or a bit longer until the center of the bread is cooked.
Carrot Honey Bread
Ingredients
2 large eggs
3/4 cup canola oil
3/4 cup honey
2 teaspoons vanilla extract
1 cup all-purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon baking soda
3 large carrots grated
Instructions
Preheat oven to 350°F.
Add eggs, oil, honey, and vanilla to a bowl and beat until smooth.
Add the remaining ingredients to a fresh bowl and mix well.
Add the dry mixture to the wet mixture and stir until combined.
Add carrots and stir until well combined.
Pour the batter into the pan and place in the oven.
Bake for an hour or a bit longer until the center of the bread is cooked.
Cornbread
Ingredients
3 large eggs
1 2/3 cup milk
2/3 cup butter
2 1/3 cup all-purpose flour
1 cup cornmeal
1 cup sugar
4 1/2 teaspoons of baking powder
1 teaspoon salt
Instructions
Preheat oven to 400°F.
Add butter and sugar to a large bowl and beat until creamed.
Add eggs and milk to a new bowl and stir.
Add flour, cornmeal, baking powder, and salt to a new bowl and mix.
Add the wet and dry mixtures to the creamed mixture, alternating as you go.
Stir until well mixed.
Pour the batter into the pan and place in the oven.
Bake for 25 to 30 minutes or a bit longer until the center of the bread is cooked.
Lemon Yogurt Bread
Ingredients
1 large egg
1 cup lemon yogurt
1/3 cup canola oil
1 tablespoon lemon juice
1 1/2 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder

Preheat oven to 325°F.
Add all of the dry ingredients to a large bowl and stir.
Add the remaining ingredients to a separate bowl and stir until mixed.
Add the dry mixture to the wet mixture and stir until combined.
Pour the batter into the pan and place in the oven.
Bake for 40 to 50 minutes or a bit longer until the center of the bread is cooked.
Herby Bread
Ingredients
1 large egg
1 cup milk
1/3 cup canola oil
3 cups all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
3 teaspoons caraway seeds
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon dried thyme
Instructions
Preheat oven to 350°F.
Add all of the dry ingredients to a large bowl and stir.
Add the remaining ingredients to a separate bowl and stir until mixed.
Add the dry mixture to the wet mixture and stir until combined.
Pour the batter into the pan and place in the oven.
Bake for 40 to 50 minutes or a bit longer until the center of the bread is cooked.
