Replying to @Carla Romo day 5 of my soup series is a creamy lemon orzo soup 🍋🍲 enjoy! recipe (makes 4 servings) 1. to a large pot over medium heat add 2 tbsp olive oil, 1 tbsp minced garlic, 1 cup diced onion (I used 3/4 cup yellow onion and 1/4 cup red onion), and 1/2 cup chopped carrots 2. sauté until soft and fragrant, about 5 minutes 3. add 4 cups of broth (option to use chicken or vegetable broth) and bring to a boil 4. add 1 cup of orzo, reduce the broth to a simmer, and cook uncovered for 10 minutes until orzo is al dente 5. in a separate small mixing bowl add the juice of 1 lemon and 3 eggs, and whisk together 6. slowly pour about 1 cup of the orzo soup broth into the small mixing bowl with the eggs and lemon, while continuously whisking 7. SLOWLY add the liquid from the small mixing bowl to the orzo soup while stirring the broth to incorporate – the broth will become smooth and creamy! 8. next add 1 cup cooked chicken, 1 can of artichoke hearts, 1 handful of spinach, and 3 tbsp fresh chopped dill 9. stir everything together, add salt and pepper to taste, and enjoy! #nutritionbymeagan #soupsthatarebasicallysalads #souprecipeideas

One Pan Harissa Chicken & Chickpeas This is my fragrant one-pan Moroccan-inspired harissa chicken with chickpeas, one of my new midweek favourites. It’s packed with flavour, high in protein, and so easy to make. Let’s go: Ingredients: Serves 4 (520 calories | 45g protein per serving) – 1kg chicken thighs – 1 can (400g) chickpeas, drained – 1 can (400g) chopped tomatoes – 1 onion, chopped – 1 tbsp garlic – 1 red pepper, sliced – 1 tbsp smoked paprika – 1 tbsp cumin seasoning Marinade: – 1 tsp cumin seasoning – 2 tbsp @belazu rose harissa Method: – Marinate the chicken thighs with 1 tsp cumin seasoning, 2 tbsp harissa paste, salt, and pepper. – Heat a pan over medium heat and cook the chicken for about 15 minutes until the skin is crispy and the juices run clear. Remove from the pan. – In the same pan, add the onion, garlic, and red pepper. Sauté for 5-10 minutes until softened. – Stir in the chopped tomatoes, 1 tbsp smoked paprika, and 1 tbsp cumin seasoning, season with salt and pepper. – Add the chickpeas and cook for another 5 minutes. Then return the chicken to the pan along with any resting juices. – Garnish with fresh parsley and a squeeze of lemon juice. Serve with rice, potatoes, or crusty bread. Enjoy! crispy salmon with avocado cucumber salsa 🥒🥑 full recipe below! 👇🏼 what you’ll need: For the salmon 4, 6oz pieces of salmon, cubed 2 tbsp mayo 3 tbsp coconut aminos 1 tbsp minced garlic 1-2 tbsp sriracha 
avocado cucumber salsa 3 small Persian cucumbers, diced 3 jalapenos, seeds removed & diced 3 avocados, diced 3 green onions, diced 1/2 red onions, diced Juice of 1 lime Sprinkle of salt to taste 
For the bowl Served with choice of rice Topped with sesame seeds & sriracha mayo instructions: 1. Place the cubed salmon in a large bowl. 2. In a small bowl, mix the mayo, coconut aminos, minced garlic, and sriracha. 3. Pour the mixture over the salmon and stir until it is well coated. Let this marinate for about 10 minutes before you start cooking. 4. To make the salsa, dice up all the salsa ingredients and add to a large bowl. Squeeze the lime juice on top and add some salt. Mix well and taste. Add more salt & lime juice if needed. Place in the fridge until the salmon is ready! 5. Once the salmon has sat in the marinade for around 10 minutes, add to the air fryer basket and air fry at 380 for around 10-11 minutes, flipping halfway through, until fully cooked and nice and crispy! The cooking time will greatly depend on how thick the salmon is, so keep an eye on it! 6. Once the salmon is done it’s time to assemble. To a bowl add some rice, the salmon, and the avocado cucumber salsa. Top with some sriracha mayo (equal parts mayo & sriracha) and some sesame seeds.
