National Green Bean Casserole Day is on Dec. 3. This staple holiday side dish usually incorporates ingredients with dairy, but you can omit those ingredients with this dairy-free green bean casserole recipe.
1 lb (450 g) trimmed and halved fresh green beans or 2 cans of green beans, drained 2 tbsp olive oil or avocado oil 1 finely chopped small onion 3 minced cloves garlic
8 oz (225 g) sliced cremini or button mushrooms 2 tbsp all-purpose flour (or gluten-free flour if needed) 1 cup vegetable broth 1 cup unsweetened almond milk (or another plant-based milk)
1 tsp soy sauce (or coconut aminos for soy-free) ½ tsp salt (adjust to taste) ½ tsp black pepper ¼ tsp nutmeg (optional for depth of flavor)
1 cup crispy fried onions (store-bought, dairy-free) OR make your own with: 1 thinly sliced medium onion ¼ cup all-purpose flour ¼ cup unsweetened almond milk Oil for frying
Bring a large pot of water to a boil. Add green beans and cook for 4-5 minutes until tender-crisp. Drain and immediately transfer to an ice water bath to stop cooking. Drain again and set aside.
Heat olive oil in a large skillet over medium heat. Add the onions and sauté until softened, about 3-4 minutes. Add the garlic and mushrooms. Cook until mushrooms start to brown – about 5 minutes.
Sprinkle flour over the vegetables and stir well to coat. Cook for 1 minute to remove the raw flour taste. Gradually whisk in the vegetable broth and almond milk, stirring constantly to prevent lumps.
Add soy sauce, salt, pepper and nutmeg if using. Simmer for 3-4 minutes until the sauce thickens.
Preheat the oven to 375°F (190°C). In a large mixing bowl, combine the green beans with the creamy mushroom sauce. Transfer to a greased 9x13-inch baking dish.
Sprinkle evenly on top of the casserole.
Toss onion slices in almond milk, then coat in flour. Heat oil in a skillet over medium heat. Fry the onions in batches until golden brown and crispy. Drain on paper towels and sprinkle on top of the casserole.
Bake uncovered for 15–20 minutes, or until the casserole is bubbling and the topping is golden.
