Try These Healthier Hearty Mashed Potatoes

After the back-to-back-to-back overindulgences of Thanksgiving, religious observances and New Year's Eve, many resolve to eat healthier.

Mashed potatoes don't just normally not appear on the top ten list of healthy foods. They're normally nowhere near the list.

This recipe doesn't work the miracle of reducing calorie content. It does reduce the amount of fat and salt from butter and cream normally used without sacrificing flavor.

Poke holes in unpeeled russet potatoes then boil in one part water and two parts low sodium chicken or vegetable stock for 45 minutes. You won't need to add salt later.

Step 1

Drain the potatoes. Make sure to leave them a bit damp before putting them aside.

Step 2

Cut the top off of a small head of garlic. Rub with light virgin olive oil and wrap in foil with a small venting hole. Place in oven at 450 F for 30 minutes then let cool.

Step 3

No need to peel the garlic. The roasting should have softened it enough that it can be squeezed onto the potatoes.

Step 4

Add sour cream then mash. If a potato masher isn't available a fork should suffice. The sour cream has less saturated fat than butter and heavy cream.

Step 5

Chop then sprinkle herbs like scallions, rosemary, thyme. These not only add savor but also bright and verdant color to the dish.

Step 6

Consider garnishing with sauteed cremini mushrooms and steamed broccoli florets. They supplement deeper umami and nutritional value respectively.
