Craving a comforting bowl of homemade tomato soup? This flavorful recipe guides you to creating a warm, creamy and satisfying dish in the comfort of your kitchen.
If using fresh tomatoes, blanch and peel them. Boil for 30 seconds, then transfer to ice water. The skins will slide off easily. Chop them roughly for cooking.
Heat olive oil in a large pot over medium heat. Add diced onion and garlic. Sauté until fragrant and softened, about 5 minutes.
Add your chopped or canned tomatoes to the pot. Stir well to combine them with the onions and garlic.
Slowly pour in 2 cups of vegetable broth. Stir and bring the mixture to a gentle boil.
Add salt, pepper and a pinch of sugar to balance the acidity of the tomatoes. Toss in fresh or dried basil for extra flavor.
Lower the heat and let the soup simmer for 20-30 minutes. This allows the flavors to meld.
Use an immersion blender or transfer the soup to a blender. Blend until creamy and smooth. For a chunkier texture, blend only partially.
Serve your tomato soup hot, paired with crusty bread, grilled cheese or croutons. Garnish with fresh basil leaves for a touch of elegance.
For a creamy variation, add a splash of heavy cream or a dollop of sour cream just before serving.
