When the sun's blazing and the last thing you want to do is spend hours in a hot kitchen, lazy summer dinners are the way to go.
With minimal prep, little to no oven time and big flavor without the fuss, these dinners keep things light, cool and delicious. Just like summer should be!
Slice fresh mozzarella, tomatoes and basil. Drizzle with balsamic glaze, then serve with store-bought rotisserie chicken.
Sauté shrimp with taco seasoning. Once cooked, stuff into tortillas with slaw mix and a dollop of sour cream or lime crema.
Just layer store-bought hummus, pita, fresh veggies, olives and your choice of protein like falafel or rotisserie chicken. It’s light, flavorful and perfect for grazing on a hot evening.
Toss cooked and chilled soba or rice noodles with sesame oil, soy sauce, chopped veggies and a protein like tofu or shredded chicken.
Toss cooked or rotisserie chicken with Caesar dressing, chopped romaine and parmesan, then wrap it all in a tortilla. It’s cool, crunchy and totally effortless.
Cook the orzo, then stir in sautéed garlic, fresh spinach, lemon juice and olive oil. The heat wilts the spinach, and the lemon adds a fresh kick, done in under 20 minutes.
Create an open-face plate with sliced prosciutto, salami, cheeses, olives, pickles and crusty bread. You assemble, no heat required.
Use naan or tortillas, add sauce, cheese and toppings. Bake or toast until melty.
