1 lb large shrimp, peeled and deveined 1 cup buttermilk 1 cup all-purpose flour 1/2 cup cornmeal 1 tsp paprika 1/2 tsp cayenne pepper
1/2 tsp garlic powder 1/2 tsp onion powder Salt and freshly ground black pepper, to taste Vegetable oil, for frying
1/2 cup mayonnaise 2 tbsp Dijon mustard 1 tbsp ketchup 1 tbsp lemon juice 1 tbsp hot sauce (such as Tabasco) 1 tbsp finely chopped parsley 1 tsp garlic powder
1 tsp smoked paprika 1/4 tsp cayenne pepper (optional) Salt and freshly ground black pepper, to taste
4 French baguettes or hoagie rolls Shredded lettuce Sliced tomatoes Sliced pickles (optional)
In a small bowl, combine the mayonnaise, Dijon mustard, ketchup, lemon juice, hot sauce, parsley, garlic powder, smoked paprika and cayenne pepper (if using). Season with salt and pepper to taste.
Mix well and refrigerate while you prepare the shrimp. In a shallow bowl, pour the buttermilk over the shrimp, tossing to coat. Let them soak for about 10-15 minutes.
In another shallow bowl, combine the flour, cornmeal, paprika, cayenne, garlic powder, onion powder, salt and pepper. Heat about 2 inches of vegetable oil in a large skillet over medium-high heat.
Dredge each shrimp in the flour mixture, pressing gently to coat well. Carefully place the shrimp into the hot oil in batches (don’t overcrowd the pan) and fry for about 2-3 minutes on each side or until golden brown and crispy.
Lightly toast the French baguettes or hoagie rolls in the oven or on a skillet for a few minutes, just until golden and crisp. Spread a generous amount of the sauce on the inside of each roll. Layer the fried shrimp on the bottom.
Top with shredded lettuce, sliced tomatoes, and pickles (if using). Close the sandwich and serve immediately.
Enjoy your Shrimp Po'Boy with a side of crispy fries or chips for the full New Orleans experience!
