In a medium bowl, combine the chicken, mashed avocado, cilantro, and lime juice.
Mix until all ingredients are thoroughly combined.

BBQ Chicken Salad
Ingredients: 2 cups cooked chicken breast (minced or shredded), 1/2 cup barbecue sauce, 1/4 cup diced red onion and 1/4 cup corn kernels (canned or fresh)
Steps:
In a large bowl, mix the shredded chicken with the barbecue sauce until well coated.
Add the diced red onion and corn kernels, and stir to combine.
Season with salt and pepper if desired.
Serve on a hamburger bun, in a wrap, or over a bed of greens.
Apple Chicken Salad
Ingredients: 2 cups cooked chicken breast (minced or shredded), 1/2 cup mayonnaise, 1/2 cup diced apple (any variety) and 1/4 cup chopped walnuts
Steps:
In a large bowl, combine the chicken, mayonnaise, diced apple, and chopped walnuts.
Mix well until all ingredients are evenly distributed.

Pesto Chicken Salad
Ingredients: 2 cups cooked chicken breast (minced or shredded), 1/2 cup pesto sauce, 1/4 cup grated Parmesan cheese and 1/4 cup chopped sun-dried tomatoes
Steps:
In a large bowl, mix the chicken with the pesto sauce until well coated.
Add the grated Parmesan cheese and chopped sun-dried tomatoes, and stir to combine.
Season with salt and pepper if needed.
Serve on a baguette, in a wrap, or as a topping for mixed greens.
