Ingredients: 2 cucumbers 1 can of chickpeas 2 avocados 3 tablespoons olive oil garlic powder onion powder cumin paprika s+p 2 tablespoons of mayo i used @primalkitchenfoods 1 tablespoon of sriracha Directions: 1. Slice your cucumber into bite size pieces. 2. Mash your avocado and season with 1 tablespoon of olive oil, garlic powder and s+p. 3. Drain your chickpeas and rinse with water. Pat them dry with a paper down. To sauté: heat up 2 tablespoons of olive oil in a pan, add your chickpeas and season generously with garlic powder, cumin, paprika, onion powder and s+p until crispy. To bake: Preheat oven to 400. Toss your chickpeas with olive oil and season generously with garlic powder, cumin, paprika, onion powder and s+p. Spread evenly on a baking sheet and roast for 20-30 minutes. 4. Add your avocado to your cucumber slices. 5. Top with cooked chickpeas. 6. Mix your mayo + siracha in a bowl and add to a plastic bag & cut the corner for drizzling. 7. Drizzle spicy mayo on top. 8. Serve & enjoy!
