Ingredients:

  • 4 slices sourdough bread
  • 2 tablespoons butter, softened
  • 6 oz sharp white cheddar cheese, sliced

Ingredients:

  • 4 slices rustic wheat bread
  • 3 tablespoons butter, divided
  • 8 oz mixed mushrooms (shiitake, cremini, oyster), sliced
  • 1 large yellow onion, thinly sliced
  • 6 oz Gruyère cheese, grated
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme
  • Salt and black pepper to taste
  • 1 tablespoon balsamic vinegar

Instructions:

1. In a large skillet, melt 1 tablespoon butter over medium heat. Add onions and cook slowly for 20-25 minutes, stirring occasionally, until deeply caramelized. Add balsamic vinegar in the last minute. Transfer to a bowl.
2. In the same skillet, add another ½ tablespoon butter and sauté mushrooms with garlic and thyme for 5-7 minutes until golden. Season with salt and pepper. Set aside.

4. On the unbuttered side of two slices, layer half the Gruyère, then add caramelized onions and sautéed mushrooms.

  • 4 slices multigrain bread
  • 2 tablespoons butter, softened
  • 1 cup butternut squash, roasted and mashed
  • 6 oz fontina cheese, sliced
