Ingredients:
- 6 large croissants, torn into pieces
- 2 cups diced ham
- 2 cups shredded Gruyere cheese
- 8 large eggs
- 2 cups whole milk
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
1. Grease a 9×13 baking dish.
2. Layer torn croissants, ham, and 1½ cups cheese in the dish.
3. Whisk together eggs, milk, cream, mustard, thyme, salt and pepper.
4. Pour mixture over croissants.
5. Cover and refrigerate overnight.
6. Preheat oven to 350°F.
7. Sprinkle remaining cheese on top.
8. Bake for 45-50 minutes until golden brown.

Ingredients:
- 1 loaf brioche bread
- 2 cups fresh blueberries
- 6 eggs
- 2 cups milk
- Zest of 2 lemons
- 1/4 cup maple syrup

Instructions:

Ingredients:
- 4 English muffins
- 8 eggs for poaching
- 8 oz smoked salmon
- Hollandaise sauce
- Fresh dill
- Capers
Instructions:

@brookekellynutrition A #frittata for #spring ! 💚🌱 The perfect healthy #highprotein #mealprep Spring Greens Frittata with Manchego & Romanesco (Serves 4-5 | GF / RSF) 1 small romanesco, cut into small florets 1 bunch asparagus 1 tablespoons extra virgin olive oil 1 cup snow peas, finely julienned 1 bunch baby leeks (or one large leek), tops trimmed and finely chopped 1 brown onion, finely chopped 25g unsalted butter 4 oil packed anchovy fillets 2 tablespoons white wine (optional) 4 cups packed kale, finely chopped 12 free range eggs 4 cloves garlic, crushed 10g finely chopped mint 1/3 cup manchego cheese grated (or cheddar), plus extra Salt Pepper 1. Preheat the oven to 200 degrees celsius and line a medium shallow pie dish with greaseproof paper. 2. Fill a large pot with water and bring to the boil. 3. Set aside a large bowl of ice water. 4. Once the water is boiling, add the romanesco. Blanch until just tender (about 2 minutes), then transfer to the bowl of ice water for 5 minutes before draining and setting aside. 5. Trim the ends off the asparagus. Using a vegetable peeler, finely shave lengthways into long strips, reserving the heads. 6. Heat the olive oil in a non stick pan over a medium heat. Add the onion and baby leeks, sautéing until just soft. Next, add the butter, anchovy and season with a little salt and pepper. Once the butter has melted, deglaze the pan with the wine. Finally, add the kale and cook until in has just wilted. Turn off the heat. 7. Crack the eggs into a large mixing bowl and whisk until combine. Next, stir in the crushed garlic, mint, grated cheese and a little salt and pepper. 8. Fill the base of the pie dish with the sautéed greens, followed by the shaved asparagus and snow peas. Arrange the romanesco with the tops facing upwards, then pour over the egg mixture, allowing it to fill every crevice. Top with the remaining heads of asparagus, then finish with a little more grated cheese and pepper. 9. Transfer to the oven to bake for approximately 15 minutes or until it is golden on top and set in the centre. Slice and serve warm with a fresh rocket salad if desired.

- 1 cup asparagus
- 1 cup cherry tomatoes
- 1 cup spinach
- 1/2 cup goat cheese
- Fresh herbs
Instructions:
1. Sauté vegetables.

4. Bake at 375°F for 20-25 minutes.
