Growing up vegetarian, I was accustomed to eating a plethora of fruits and vegetables. Still, there are some that I never really appreciated until becoming an adult. I know that’s the case with kids and most vegetables—but mushrooms aren’t most vegetables. Unique in texture and taste and even leading their own flavor category, they are truly special.
For vegetarians or those taking on a plant-based diet, mushrooms can be an amazing alternative to meat. With a chewy texture that rivals steak and chicken, it gives dishes a hearty feel. Their earthy taste also adds a deep savory element to anything they’re served on or with. But best of all, the world of mushrooms is diverse, filled with a spectrum of flavors, from sweet and juicy to rich and buttery.
Put simply, mushrooms are versatile vegetables that can be the main attraction or play a supporting role. The choice is up to you, and for those who love mushrooms, there’s no wrong answer. There are lots of ways to enjoy these tasty morsels, but to narrow the scope, we’ve gathered three of the best below.
Mushroom Stroganoff
Ingredients
- 1 pound egg noodles
- 3 tablespoons butter, divided
- 1 small white onion
- 4 cloves garlic
- 1 pound baby bella mushrooms
- 1 1/2 cups vegetable stock
- 1/2 cup dry white wine
- 1 tablespoon Worcestershire sauce
- 1/2 cup light sour cream
- 3 1/2 tablespoons flour
- 1/4 teaspoon dried thyme
- Kosher salt and freshly cracked black pepper
- Grated Parmesan cheese, chopped fresh parsley, cracked black pepper for garnish
Instructions
- Cook noodles per package instructions.
- Melt 1 tablespoon butter in skillet.
- Thinly slice onions and add to pan. Sauté until tender.
- Add remaining butter, minced garlic and mushrooms to pan and stir until mushrooms are tender.
- Add white wine to deglaze the pan. Let simmer for several minutes.
- In large mixing bowl, whisk vegetable stock, Worcestershire sauce, and flour until smooth.
- Pour the mixture into the pan and stir in dried thyme.
- Simmer with occasional stirring until sauce has become slightly thick.
- Stir in sour cream and season to taste with salt and pepper.
- Pour over egg noodles and garnish with desired toppings.
Stuffed Mushrooms
Instructions
- 20 to 24 large cremini mushrooms, stemmed
- ½ cup panko breadcrumbs
- ½ cup grated pecorino cheese
- ½ cup parsley, finely chopped
- ¼ cup oil-packed sun-dried tomatoes, chopped
- 2 tablespoons pine nuts
- 2 garlic cloves
- ¼ teaspoon sea salt
- Freshly ground black pepper
- Extra virgin olive oil; for drizzling
Instructions

- Preheat the oven to 400°F
- In a mixing bowl, add panko crumbs, cheese, chopped parsley, sun-dried tomatoes, pine nuts, garlic, salt, and several grinds of pepper.
- Place mushrooms cap side down on a baking sheet lined with parchment paper. Drizzle open cavities with olive oil and sprinkle with salt.
- Spoon filling mixture into the mushrooms, drizzle with more olive oil, and bake until mushrooms are tender and the filling is browned.
- Garnish with parsley, and additional salt and pepper if needed.
Creamy Mushroom Toast
Ingredients
- 1 cup chopped mushrooms of your choice
- 2 garlic cloves crushed
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 tablespoon butter
- Juice of 1/2 lemon
- salt and pepper to taste
- 2 slices of good bread
- Cream cheese
- Chopped parsley for garnish
Instructions
- Drizzle olive oil into a skillet on high heat.
- Add mushrooms in batches and cook until well browned.
- Stir in garlic, herbs, and red pepper flakes.
- Add butter and lemon juice and stir until a creamy sauce forms.
- Remove from heat and season with salt and pepper to taste.
- Toast bread slices.
- Spread cream cheese over bread and top with mushrooms.
- Garnish with parsley, serve, and enjoy.
