Even more enticing is the fact that there are lots of easy omelet recipes to enjoy. Whether you prefer savory cheeses or simple garden veggies, there’s truly something for every palate.

Crafting the perfect omelet may seem daunting at first. From getting the cook right to nailing the fold, it can be intimidating. But with practice and patience, you’ll find that not much skill is needed to whip up a mouth-watering meal. With the technique mastered and the right fillings, you can enjoy a protein-packed breakfast or a light lunch in just a matter of minutes. Denver Omelet

Ingredients

  • 2 tablespoons butter or vegetable oil, divided
  • 2 tablespoons green bell pepper, chopped
  • 2 tablespoons onion, chopped
  • 1 ounce cooked ham, chopped
  • 2 large eggs
  • 2 tablespoons shredded cheddar cheese

Instructions

  1. Heat 1 teaspoon of the butter or oil in a small to medium skillet to coat the bottom.
  2. Add the bell pepper, onion, and ham. Cook until softened, stirring occasionally. Transfer to a plate. Wipe out the skillet.
  3. Whisk eggs in a clean bowl until foamy.
  4. Pour the mixture into the skillet over medium heat and add the remaining teaspoon of butter or oil. Swirl it around the pan.
  5. Cook until some egg is starting to congeal. Stir and then continue cooking until the bottom is mostly congealed.
  6. Scrape the cooked egg towards one half of the skillet and let the omelet cook until it is mostly set but still slightly wet on top.
  7. Add the filling ingredients to one half of the egg and top with cheese.
  8. Fold the half of the egg that doesn’t have filling over the half that does.
  9. Slide the omelet out of the pan and serve immediately.

Veggie Omelet

Ingredients

  • 1 tablespoon olive oil
  • 2 large eggs
  • 1 tablespoon water
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup red onion, diced
  • 1/4 cup sliced mushrooms
  • 1/4 cup red bell pepper, diced
  • 1/2 cup baby spinach leaves
  • 1/4 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a nonstick pan over medium heat. Add onion, mushrooms, and red bell pepper. Season to taste with salt and ground black pepper.
  2. Cook until softened, then add the spinach and let it wilt.
  3. Transfer the veggies to a small bowl and set aside.
  4. In a small bowl, whisk together the eggs, adding salt to taste. Pour the egg mixture into the pan, using a spatula to spread it to the edges of the pan.
  5. Cook for 1-2 minutes until the bottom is very lightly browned.
  6. Add the veggie mixture over half of the omelet. Spread the cheese over the veggies, and then carefully fold the empty half of the omelet over the fillings.
  7. Slide the omelet onto a plate and serve immediately.

Frittata

Ingredients

  • 6 large eggs
  • 2 garlic cloves, minced
  • Extra-virgin olive oil
  • Salt and pepper to taste
  • 1 shallot, chopped
  • 2 roasted red bell peppers, chopped
  • 2 cups spinach
  • 1/3 cup crumbled feta cheese

Instructions

  1. Heat ½ tablespoon olive oil in a 10 or 12-inch cast-iron skillet over medium heat.
  2. Add the shallot, a pinch of salt, and pepper, and cook until translucent, about 5 minutes.
  3. Add the roasted red peppers and spinach.
  4. Sauté until the spinach is wilted, then add the egg mixture and gently shake the pan to distribute.
  5. Sprinkle with the feta and bake 15 to 20 minutes or until the eggs are set.
  6. Season to taste and serve.

Mushroom Omelet

Ingredients

  • 2 eggs
  • 1 tablespoon milk
  • Salt and ground black pepper to taste
  • Handful of mushrooms, halved
  • Green onions, diced
  • 1 tablespoon shredded cheddar cheese

Instructions

  1. Beat eggs together with milk, salt, and pepper in a bowl.
  2. Heat oil in a skillet over medium heat. Add mushrooms and cook, stirring until they are softened.
  3. Mix in green onions and cook until slightly softened.
  4. Pour in the beaten eggs. Cook and stir until the edges harden, 2 to 3 minutes.
  5. Flip and sprinkle cheddar cheese on top. Cook until egg is set and cheese is melted, then fold omelet in half and continue cooking.
  6. Slide out of the pan and serve immediately.

French Omelet

Ingredients

  • 3 large eggs
  • Pinch salt
  • Pinch white pepper
  • 1 tablespoon unsalted butter
  • Finely chopped chives or parsley, for garnish

Instructions

  1. In a medium bowl, whisk the eggs until no traces of white remain. Then season with salt and white pepper.
  2. In an 8-inch nonstick skillet with rounded sides set over medium heat, melt the butter, being careful not to let it brown and swirling to coat the bottom and sides.
  3. Pour the eggs into the pan, holding the handle of the pan and gently shaking the pan back and forth.
  4. Once the eggs are beginning to cook, remove the pan from the heat.
  5. Run a fork around the edges to release the eggs. Tilt the pan to a 45-degree angle so that the eggs move to one side of the pan.
  6. Keep the pan tilted and fold the eggs toward the edge until you have a half-moon shape, running the fork under and around the eggs as needed to loosen them from the pan.
  7. Sharply tap the handle 2 or 3 times with your free hand to push the eggs over the edge by about 2 inches. Then use your fork to fold the overhanging eggs up and towards the center of the omelette.
  8. Slide the omelet gently out of the pan and onto the plate.
  9. Top with chopped chives or parsley before serving.
