Ingredients:

  • 1 pound spaghetti
  • 4 large eggs
  • 1 cup grated Parmesan cheese
  • 4 slices bacon; diced
  • 2 cloves garlic, minced
  • Black pepper to taste

Instructions:

Ingredients:

  • 2 cans of any beans you have
  • 1 can diced tomatoes
  • 1 onion, diced
  • Any vegetables needing to be used up
  • Chili powder, cumin, garlic powder
  • Optional: ground meat

Instructions:

1. Sauté onion and any fresh vegetables.
2. Add meat if using and brown.
3. Add beans, tomatoes, and seasonings.
4. Simmer for 20 minutes.
5. Top with whatever you have: cheese, sour cream, chips.

Ingredients:

  • Bread slices
  • Any cheese combinations
  • Butter
  • Optional add-ins: tomato, ham, pesto, olives

Instructions:

1. Butter outside of bread slices.
2. Layer cheeses and add-ins between bread.
3. Cook on medium-low until golden and melty.

Clean-Out-The-Fridge Frittata Recipe

Ingredients:

  • 8 eggs
  • 1/4 cup milk
  • Any vegetables that need to be used
  • Any cheese
  • Herbs and seasonings

Instructions:

1. Preheat oven to 375°F.
2. Sauté vegetables in an oven-safe pan.
3. Whisk eggs with milk and seasonings.
4. Pour over vegetables, top with cheese.
5. Bake for 15-20 minutes until set.

My quick 6 ingredient Chicken Curry! This is perfect for mid week meals for hungry kids and you don’t have much time and don’t want to waste time labouring over so many ingredients! It delivers lots of flavour and is cooked within 20mins using only 6 ingredients! This has been in my armour of single parent recipes for a while as time is so precious but I still want to eat delicious home cooked meals with my daughter! My best advice for you when making this is to make sure you brown the chicken first, when you add the tomato paste let that cook until the paste changes colour and the oil splits to the surface, it almost turns bright coral in colour, then add in the curry powder slurry and let that roast off until the pan goes dry, add coconut milk and allow to simmer and let those flavours do its magic, season with salt according to taste and voila! Ingredients 2 spring onions finely chopped 2 heaped tbsp garlic ginger paste 500g chicken breast cut up into 3cm chunks 2 heaped Tbsp curry powder mixed with 100ml water 3 tbsp good quality tomato paste (I love Turkish tomato paste as it’s packed with flavour) X1 400ml tin coconut milk Salt to taste #quickcurry #singleparenting #singleparentlife #recipes #chickencurry

  • 1 can coconut milk
  • Curry powder or paste
  • Any protein (tofu, chicken, chickpeas)
  • Any vegetables
  • Rice for serving

Instructions:

1. Cook protein if needed.
2. Sauté vegetables.
3. Add coconut milk and curry seasonings.
4. Simmer until vegetables are tender.
5. Serve over rice.
