- 1 cup plant-based chorizo (optional)
Instructions
1. Dice and roast sweet potatoes with olive oil and seasonings (425°F, 20-25 mins).
2. Heat pre-cooked grains and beans.
3. Assemble bowl with grains as base.
4. Top with roasted sweet potatoes, beans, and chorizo if using.
