Sweet and decadent, these pancakes have been deemed marriage-worthy on TikTok. And it’s not just the opinion of creator Winne (@homemeide) who dreamed up the recipe for her husband. The pancakes have made the rounds on the platform and have received the stamp of approval from other beloved creators like Jordan Howlett, best known as @jordan_the_stallion8 online.
As someone who prefers a savory breakfast over a sweet bite, this recipe also caught my attention when scrolling through the app. For context, I love cinnamon buns and coffee—in my opinion, there’s no better pairing. But what intrigued me the most was how light and airy the dish was. The pancakes looked fluffy when jiggled on the plate, and the icing topping was a delicate layer instead of a heavy coating of frosting. I had to take a deeper look to see how they were made.
It turns out that this recipe has a few tricks up its sleeve. The ingredients for the batter are pretty straightforward, using eggs, milk, oil, flour, and sugar. But the cinnamon filling has a catch, with a small amount of pancake batter mixed into its buttery recipe. Even the method of cooking the pancakes is unique. Instead of being flipped to cook on both sides, the hotcakes are covered with a lid to steam, leaving them light and the cinnamon filling gooey. Cinnamon Roll Pancake Recipe
Ingredients
For the pancakes
- 1 egg
- 1 1/4 cup milk
- 1/4 cup oil
- 1 1/2 cup flour
- 2 teaspoons of baking powder
- 1 teaspoon of sugar
For the cinnamon swirl filling
- 4 tablespoons butter, softened
- 1/4 cup sugar
- 2 teaspoons cinnamon
- 1 tablespoon pancake batter
For the icing
- 2 cups powdered sugar
- 1 1/2 tablespoons milk
Instructions
- Add each of the wet ingredients (the egg, milk, and oil) to a bowl and whisk together until well combined.
- Add all the dry ingredients (flour, baking powder, and sugar) to the mixture and gently whisk until combined, ensuring not to overmix, then set aside.
- In a separate bowl, add butter, 1/4 cup sugar, cinnamon, and one tablespoon of the pre-made pancake batter.
- Mix with a flat spatula until everything is well combined, then transfer the cinnamon mixture into a piping bag.
- Add a few tablespoons of butter to a skillet set on medium heat. Then add 2-3 rounds of batter to the pan, depending on the size of your skillet.
- Cover the skillet with a lid and cook until bubbles start to form in each pancake.
- Pipe the cinnamon mixture in swirls on top of each pancake, then cover with lid and cook for 4-5 minutes.
- Stack on a plate and serve warm, topped with icing.
