These Carrot Patch Cupcakes are so easy to make and fun for any springtime celebration! ⭐️ Follow for more simple, healthier recipes ⭐️ I made my Paleo Chocolate Cupcakes and Avocado Frosting, added some edible dirt and a strawberry dipped in chocolate to make this fun edible patch. If you’re short on time, you can also buy chocolate cupcakes and just add the crushed cookies and dipped strawberry! ✨ Carrot Patch Cupcakes ✨ (makes 6 cupcakes) Paleo Chocolate Cupcake Ingredients: -2.5 tbsp full-fat coconut milk -1/3 cup melted coconut oil -3 eggs -1/3 cup maple syrup -1/2 tsp Vanilla Extract -1/4 cup cacao powder -1 tsp baking powder -1/3 cup coconut flour Frosting ingredients: -1/2 ripe avocado -2 tbsp cacao powder -2.5 tbsp maple syrup Other ingredients: -6 strawberries -1/2 cup melted orange chocolate (I used white chocolate dyed with natural orange colorant) -1/4 cup crushed cookies (I didn’t have cookies, so I processed together 1/4 cup almond flour, 1 tbsp cacao powder, and 1/4 cup pitted dates) Directions: Preheat the oven to 350F. Line a muffin tin with 6 cupcake liners. Blend together the coconut milk, coconut oil, eggs, maple syrup, vanilla, and apple cider vinegar until smooth. Blend in the cacao powder, baking powder, and coconut flour. Distribute evenly between the 6 cupcake liners. Bake for 20-25 minutes, or until a toothpick comes out clean. While baking, blend together the frosting ingredients. Place in the fridge to thicken. Dip the strawberries in melted chocolate. Place on a pan lined with parchment paper and then store in the fridge. Crush cookies, or process together the almond flour, cacao powder, and pitted dates). Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1½ cups granulated sugar
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • Orange and green food coloring
  • Cream cheese frosting
  • Crushed chocolate cookies for “dirt”

Instructions:

1. Preheat oven to 350°F and line a cupcake pan with paper liners.
2. Mix dry ingredients in one bowl and wet ingredients in another.
3. Combine mixtures and fill cupcake liners ⅔ full.
4. Bake for 18-20 minutes.
5. Once cooled, frost with orange-tinted cream cheese frosting.
6. Sprinkle with cookie “dirt” and add small carrots made from fondant.
