Ingredients:
- 1 bunch fresh asparagus, trimmed
- 6-8 radishes, thinly sliced
- 4 cups mixed spring greens
- 1/4 cup shaved Parmesan
- 1/4 cup toasted pine nuts
- Lemon vinaigrette
Instructions:
1. Blanch asparagus in boiling water for 2-3 minutes, then shock in ice water.
2. Slice asparagus diagonally into 2-inch pieces.
3. Arrange greens on a platter.
4. Top with asparagus, radishes, Parmesan, and pine nuts.
5. Drizzle with lemon vinaigrette just before serving.

Easter Egg Potato Salad
Ingredients:
- 2 lbs multicolored baby potatoes
- 6 hard-boiled eggs, quartered
- 1/3 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/4 cup chopped fresh dill
- 1/3 cup red onion, finely diced
- Salt and pepper to taste
Instructions:

Carrot and Quinoa Spring Salad
Ingredients:
- 2 cups cooked quinoa
- 2 cups shredded rainbow carrots
- 1/2 cup dried cranberries
- 1/2 cup chopped pistachios
- 1/4 cup fresh mint, chopped
- Orange-honey dressing
Instructions:
1. Cook quinoa according to package instructions and let cool.
2. Combine cooled quinoa with shredded carrots.
3. Add cranberries, pistachios, and mint.
4. Toss with orange-honey dressing.
5. Chill for at least 30 minutes before serving.

- 3 cups fresh spring peas
- 1 cup sugar snap peas, sliced

- 4 cups cubed bread or brioche
- 2 cups cherry tomatoes, halved
