What caught my attention was how approachable this dish felt—especially for anyone who might feel intimidated in the kitchen.

An Easy Date Night One Pan Meal From Me to You 🍲 Cooking is a skill like anything else. The more effort and focus you give to it the easier it will be and the better you will get. If you are a beginner here’s an easy place to start. — Ingredients: – 1lb boneless skinless chicken thighs – 2 cups of white rice – 2 cups of chicken stock – avocado oil – tbsp chilli crunch oil – 1 half of a medium sized yellow onion (diced) – 4-6 cloves of minced garlic – parsley (chopped) – juice of 1/2 a lemon – parmesan cheese – seasoning blend (salt, pepper, onion powder, mushroom powder, smoked paprika, cayenne pepper (small amount)) METHOD: – chop up everything and WASH YOUR RICE – season your chicken – pan medium-high heat – add avocado oil – add chicken thighs “skin” side down – get a good sear and flip (we aren’t trying to cook them all the way right now) – turn heat down to half way between medium and low – cook chicken 1-2 more minutes and remove – add in chili crisp oil, onion and garlic – sautee 1-2 minutes and then turn heat back up – add your washed rice and toss together till water has evaporated (rice looks dry) – add a couple pinches of salt – once incorporated add 2cups of chicken broth – bring to a boil and add back in your chicken thighs – turn heat to low and cover for 12 minutes – finish with a squeeze of lemon, chopped paraely, and parmesean cheese on top ENJOY! 🤝

Easy One-Pan Chicken Dinner

Ingredients:

  • 1 lb boneless skinless chicken thighs
  • 2 cups white rice
  • 2 cups chicken stock
  • Avocado oil
  • 1 tbsp chili crunch oil
  • 1/2 medium yellow onion (diced)
  • 4-6 cloves of minced garlic
  • Parsley (chopped)
  • Juice of 1/2 lemon
  • Parmesan cheese

Seasoning Blend:

  • Salt
  • Black pepper
  • Onion powder
  • Mushroom powder
  • Smoked paprika
  • Cayenne pepper (small amount)

Instructions:

1. Chop all ingredients and wash your rice thoroughly.
2. Season chicken thighs with the seasoning blend.
3. Heat pan to medium-high heat and add avocado oil.
4. Add chicken thighs “skin” side down and sear.
5. Flip chicken and turn heat to medium-low.
6. Cook chicken 1-2 more minutes and remove from pan.
7. Add chili crisp oil, onion, and garlic to the pan.
8. Sauté for 1-2 minutes, then turn heat back up.
9. Add washed rice and toss until water has evaporated (rice looks dry).
10. Add a couple pinches of salt.
11. Pour in 2 cups of chicken broth.
12. Bring to a boil and return chicken thighs to the pan.
13. Reduce heat to low, cover, and cook for 12 minutes.
14. Finish with lemon juice, chopped parsley, and parmesan cheese.
