In Europe, Pimm’s No. 1 is a beloved gin-based liqueur “made with a proprietary blend of herbs, spice, fruit extracts and quinine,” as per Liquor.com. It dates back to the 1820s, when bar owner and restauranteur James Pimm created it as a health tonic to aid digestion, serving it to people in his London oyster bar.
By 1851, large-scale production of the drink moved forward as No. 2 (scotch) and No. 3 (brandy) were added to the lineup. Things have changed a lot since the company’s early days, but what’s always stayed consistent is their dedication to making great-tasting spirits. Pimm’s Cup

Ingredients:
- 50mL Pimm’s No. 1
- 150mL Lemonade
- 2 Sliced strawberries
- 2 Orange wedges
- 2 Slices of cucumber
- Spring mint
Instructions:
- Fill a highball glass with ice cubes.
- Pour in Pimm’s No. 1 and lemonade.
- Add strawberries, orange and cucumber.
- Stir, then top with a mint garnish to serve.
Pimm’s Spritz
If you’re tired of the traditional cup, make some small adjustments for this refreshing spritzy alternative with sparkling wine and lemonade.
Ingredients:
- 50mL Pimm’s No. 1
- 75mL Lemonade
- 25mL Sparking wine
- Sliced cucumber
- Spring mint
Instructions:
- Place ice cubes in a large wine glass.
- Pour in Pimm’s No. 1 and lemonade, then stir.
- Top off your drink with some sparkling wine.
- Add cucumber and mint as an optional garnish.
The Leading Role
This show-stopping Pimm’s recipe comes from the Red Star Tavern in Portland, Oregon.
Ingredients:
- ¾ oz Irish whiskey
- ¾ oz Scotch
- ½ oz Pimm’s No. 1
- ¾ oz Lime juice
- ½ oz Agave syrup
- 2 Dashes of Angostura bitters
Instructions:
- Combine all ingredients.
- Shake over ice.
- Double-strain your cocktail into a coupe glass.
