We’ve given you countless suggestions on how to use up the vodka and tequila you’ve been holding onto, but what about other, less common bottles you might be storing on your bar cart? In Europe, Pimm’s No. 1 is a beloved gin-based liqueur “made with a proprietary blend of herbs, spice, fruit extracts and quinine,” as per Liquor.com. It dates back to the 1820s, when bar owner and restauranteur James Pimm created it as a health tonic to aid digestion, serving it to people in his London oyster bar.

By 1851, large-scale production of the drink moved forward as No. 2 (scotch) and No. 3 (brandy) were added to the lineup. Things have changed a lot since the company’s early days, but what’s always stayed consistent is their dedication to making great-tasting spirits. Wimbledon fans outside of England might already be familiar with the main Pimm’s recipes, but we’ve got some others to help you beat the heat.

Pimm’s Cup

The most popular way to enjoy your gin on a summer day is with lemonade and fresh fruit mixed in. Learn how to make your own cup below and read on to uncover more ways to use the popular European liquor.

Ingredients:

  • 50mL Pimm’s No. 1
  • 150mL Lemonade
  • 2 Sliced strawberries
  • 2 Orange wedges
  • 2 Slices of cucumber
  • Spring mint

Instructions:

  1. Fill a highball glass with ice cubes.
  2. Pour in Pimm’s No. 1 and lemonade.
  3. Add strawberries, orange and cucumber.
  4. Stir, then top with a mint garnish to serve.

Pimm’s Spritz

If you’re tired of the traditional cup, make some small adjustments for this refreshing spritzy alternative with sparkling wine and lemonade.

Ingredients:

  • 50mL Pimm’s No. 1
  • 75mL Lemonade
  • 25mL Sparking wine
  • Sliced cucumber
  • Spring mint

Instructions:

  1. Place ice cubes in a large wine glass.
  2. Pour in Pimm’s No. 1 and lemonade, then stir.
  3. Top off your drink with some sparkling wine.
  4. Add cucumber and mint as an optional garnish.

The Leading Role

This show-stopping Pimm’s recipe comes from the Red Star Tavern in Portland, Oregon.

Ingredients:

  • ¾ oz Irish whiskey
  • ¾ oz Scotch
  • ½ oz Pimm’s No. 1
  • ¾ oz Lime juice
  • ½ oz Agave syrup
  • 2 Dashes of Angostura bitters

Instructions:

  1. Combine all ingredients.
  2. Shake over ice.
  3. Double-strain your cocktail into a coupe glass.

Gentleman’s Mule

If you’re already a fan of the Moscow Mule, this summer could be the perfect opportunity to try something new by adding the unmistakable flavors of Pimm’s to the classic cocktail.

  • 2 Lime wedges
  • Spring mint

Instructions:

  1. Fill a highball glass with ice cubes.

  3. Use lime wedges and mint to garnish before serving.
