The combo of eggs, bacon, cheese, and a fluffy biscuit is hard to resist on any occasion—but when a recipe comes together beautifully with little effort, it’s an automatic bookmark for future brunches and busy weekday mornings.

So you can imagine my excitement when this bacon, egg, and cheese biscuit sandwich popped up on my FYP. The combo isn’t new—especially for New Yorkers—but the creator’s sheet pan hack completely changed the game. No skillet, no babysitting the stove. It’s just a low-lift, high-reward sandwich perfect for meal-prepping or feeding a household of hungry mouths.

The beauty of this sandwich lies in its simplicity. From the ingredients to the equipment, it requires just a handful of items to recreate. Plus, it makes a few sandwiches to feed a family or have them later in the week. In her video, creator Natasha Greene (@asiliglamcooks) showcases how easily they come together. She begins by pouring beaten eggs onto a sheet pan and adding spinach and bacon to the pan. This method allows you to cook a larger amount at one time. Once the eggs are cooked, she uses a simple cookie cutter to cut out rounds and begins to build the sandwiches.

While she sticks to a familiar flavor combination, the recipe can be adapted to fit any taste preferences. For example, she notes that ground turkey sausage is a good substitute for those who don’t eat pork or like bacon. You can also add different vegetables, like mushrooms and kale, to make the sandwich heartier. Even the cheese can be swapped out for a different flavor profile— think white cheddar for a sharp taste or smoked gouda for something more interesting.

Fluffy Bacon, Egg & Cheese Biscuit Sandwich Recipe

Ingredients

  • Eggs
  • Fresh spinach, chopped
  • Bacon strips, cooked & chopped
  • Cheese slices
  • 1 package of biscuits, cooked
  • Cooking oil spray

Instructions

  1. Add desired amount of eggs to a bowl and whisk together until well combined. For a fluffier consistency, whisk in a bit of milk.
  2. Spray a non-stick sheet pan with the cooking oil, then pour the eggs onto the pan.
  3. Top the egg mixture with chopped spinach and bacon.
  4. Bake the eggs in oven until cooked through and lightly golden on top.
  5. Using a round cookie cutter, cut out individual egg portions.
  6. Place egg rounds on the previously cooked biscuits and add a slice of desired cheese before adding the top of the biscuit.
