By now, you’re probably tired of Thanksgiving leftovers and craving something warm and hearty to carry you through the weeks leading up to Christmas and New Year’s. If you’re on The Northeast Coast or somewhere where it’s typically cold now, then a classic beef stew might be just what you need.
This hearty dish features tender beef chuck and wholesome vegetables like carrots, potatoes, and onions, all simmered together in a rich, savory broth. The slow cooking process allows the meat to become perfectly tender while the vegetables absorb all the wonderful flavors, creating a comforting meal that’s perfect for those chilly winter evenings.

Personally, this recipe came to mind as I woke up in New York the day after Thanksgiving, and my apartment was cold. I knew that the only thing that would make me feel better overall was to break out a beef stew recipe I’d picked up from my mother — and now I’m sharing it with you all.
