Though Nobu is known for its delicious sushi and seafood dishes, nothing compares to its crispy rice with spicy tuna. Crunchy, refreshing, and with just the right amount of spice, it’s become one of the restaurant’s most beloved dishes. But what if I told you that you can have all those flavors in a healthy salad that’s as filling as it is tasty? Enter this crispy rice salad. Filled with good-for-you ingredients, fresh vegetables, and herbs, it’s a quick and easy meal for meal prepping or dinner parties.

While scrolling through TikTok, looking for dinner inspiration one evening, I stumbled across this recipe and was immediately intrigued. Having enjoyed Nobu’s famed crispy rice before, I was excited to see this take, which is much more filling. But the ingredient list and short cook time are what had me hooked. With a handful of pantry staples and fresh components, I’d be able to create a unique salad bursting with flavor. Even better, the recipe feeds four and leaves you with a generous amount of leftovers for lunch and light dinners.

Late to the bandwagon but crispy rice salad xo Ingredients ~ Serves 4 generously 4 cups of cooked rice 1 tbsp crispy chilli oil 1 tbsp sesame oil 1 tbsp soy sauce 2 lebanese cucumbers 1 mango 1 avocado 1/2 red onion 1 cup edamame beans Handful each of coriander & mint Dressing 🌶️ 1 red chilli, chopped finely 1 garlic clove, minced 1 shallot, chopped finely Juice of 1 lime 1 tbsp fish sauce & seasame oil 1 heaped tsp brown sugar Method Preheat your oven to 180°. Spread the rice over a baking tray & mix in the chilli oil, seasme oil & soy sauce. Bake for 30-40 minutes or until crispy. Prepare the salad ingredients by slicing the cucumber, mango, avocado, red onion, mint & coriander. Add to a bowl along with the edamame beans. Prepare the dressing by adding all the ingredients to a jar & mix well. Once the rice is crispy, add into the salad along with the dressing & mix well. Serve alongside a source of protein – we had tofu but chicken & fish would be delishhhhh 🎀 #recipes #cooking
