Leftover Thanksgiving Turkey Recipes

Avocado Turkey Club
Ingredients:
- 3 slices of whole-grain bread
- 4 oz shredded turkey
- 1/2 ripe avocado, sliced
- 2 slices of bacon, cooked and crispy
- 1 slice of cheese (cheddar or Swiss)
- 2 leaves of lettuce
- 2 slices of tomato
- Mayonnaise
- Salt and pepper to taste
Instructions:
1. Toast the bread slices until golden brown.
2. Spread mayonnaise on one side of each bread slice.
3. Layer the ingredients on one slice of bread: turkey, cheese, bacon, avocado, lettuce and tomato.
4. Season with salt and pepper.
5. Top with the second slice of bread, then repeat the layering process.
6. Finally, top with the third slice of bread.
7. Cut the sandwich diagonally and serve.

Turkey Pot Pie Soup
Ingredients:
- 2 cups cooked turkey, diced or shredded
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 1 cup frozen peas
- 4 cups chicken broth
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- 1/4 cup butter
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 1 cup biscuit mix (optional, for topping)
Instructions:
1. In a large pot, melt butter over medium heat. Add carrots, celery, and onion. Cook until vegetables are softened, about 5 minutes.
2. Stir in flour and cook for 1 minute to remove raw flour taste.
3. Gradually whisk in chicken broth and bring to a simmer. Cook until slightly thickened, about 5 minutes.
4. Add diced/shredded turkey, peas, thyme, and rosemary. Simmer for 10 minutes.
5. Stir in heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes.
6. Serve hot.

Turkey Spinach Cobb Salad
Ingredients:
- 4 cups fresh spinach, washed and dried
- 2 cups cooked turkey breast, diced or shredded
- 2 hard-boiled eggs, chopped
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled blue cheese
- 4 slices bacon, cooked and crumbled
- 1/4 cup red onion, finely chopped
- Your favorite salad dressing (ranch or vinaigrette works well)
Instructions:
1. In a large bowl, arrange the spinach as the base of the salad.
2. Arrange the turkey, eggs, avocado, tomatoes, blue cheese, bacon, and red onion in rows over the spinach.
3. Drizzle with your chosen dressing just before serving.
4. Toss gently to combine all ingredients and enjoy!
