Dill Pickle Pasta Salad
Ingredients
- Dry pasta
- 1 can chickpeas, rinsed and drained
- 2 cups kale coleslaw, blend
- 1 1/2 cups Persian cucumbers, diced
- 1 cup dill pickles, diced
- 1/2 cup red onion, diced
- 1/3 cup fresh dill, chopped
- 1/2 cup cheddar cheese, shredded
For the dressing
- 3/4 cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1/4 cup pickle juice
- 1/4 cup fresh dill, chopped
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 tablespoon dried dill
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook pasta as directed on the box. Once cooked, drain and place in a large mixing bowl.
- Add kale coleslaw blend, chickpeas, diced cucumbers, pickles, red onion, chopped dill, and cheddar cheese to the bowl.
- Mix ingredients together.
- Add all of the ingredients for the dressing to a separate container and stir until well mixed.
- Pour dressing over pasta salad and mix until well combined.

Fried Pickle Fritters
Ingredients
- 1 jar pickle chips
- 1 box Zatarain’s Southern Buttermilk Chicken Fry Mix
- All-purpose flour
- Oil for frying
Instructions
- Chop the pickle chips until finely diced, then scoop into a large bowl with any juice left on the cutting board.
- Add Zatarain’s Southern Buttermilk Chicken Fry Mix and flour to the bowl, then mix until all the ingredients are well combined.
- Heat oil in a large skillet.
- Add spoonfuls of the mixture to the skillet, then flatten to form fritter shape.
- Fry until golden brown.
- Remove the fritters from the oil and place on a paper towel to dry.
- Serve with your favorite dipping sauce.

- 2 tablespoons olive oil
- 1/4 cup ranch
- 1 tsp fresh dill
- 4 garlic cloves, minced

- In a small saucepan, heat the oil over medium heat.
- Add the garlic and cook for a few minutes, stirring frequently, until the garlic is softened and fragrant.
- To make the white sauce, remove the pan from the heat and stir in the fresh dill, the ranch dressing, and a little salt and pepper.
- Preheat oven to 450°F.

@primalgourmet DILL PICKLE WINGS… super easy, perfectly cooked and irresistibly delicious chicken wings served with an epic Dill Pickle Mayo for dipping. The pickle juice acts as a “ready-made” brine that flavours the meat and helps make them extra juicy. These were an instant fan favourite when I first shared the recipe back in 2019 and I still hear from people making them to this day. The only recent addition to this recipe is that I’ve started adding a tiny bit of baking soda to the wings. Baking soda is alkaline and helps raise the pH of the chicken skin, resulting in a better browning and crispier crunch. Dill Pickle Wings
Ingredients
- 2.5 lbs chicken wings
- 1 cup dill pickle juice
- 2 tbsp avocado oil
- 1 tbsp garlic powder
- 1 teaspoon baking soda
- 1/4 tsp freshly-cracked black pepper
Instructions
- Add the chicken wings to a bowl. Pour in the dill pickle juice and toss to coat, cover, and refrigerate 4 to 6 hours.
- Preheat oven to 425°F.
- Drain and discard the pickle juice. Pat the wings very dry with paper towel.
- Add the avocado oil, garlic powder, baking soda, and black pepper and toss to coat.
- Line a sheet pan with parchment paper and arrange the wings in a single layer. Alternatively, arrange the wings on a wire rack set over a sheet pan.
- Transfer the wings to the oven and bake until they are golden brown and crispy, or until the thickest part reaches an internal temperature of 165°F, 30 to 35 minutes.
- Transfer the wings to a serving platter and serve with the dipping sauce.

Ingredients
- 8-ounce block cream cheese, softened
- 1/2 cup plain Greek yogurt
- 1/2 cup sour cream
- 2/3 cup chopped dill pickles
- 1/3 cup chopped cornichons
- 2 tablespoons pickle juice, 1 tablespoon minced dill
- 1 tablespoon thinly sliced chives
- 2 teaspoons garlic powder
- 1 teaspoon onion powder, salt and pepper to taste
- 2 1/2 tablespoons salted butter
- 2/3 cup panko breadcrumbs
- 1/3 cup crushed fried onions
- 1 1/2 tablespoons thinly sliced chives.
Instructions
- In a bowl, combine cream cheese, yogurt, and sour cream.
- Mix together until fully combined and smooth.
- Add pickles, pickle juice, dill, chives, garlic powder, and onion powder.
- Stir together. Season with salt and pepper and stir again.
- Pour mixture into a serving bowl and smooth top.
- Melt butter in a skillet over medium heat.
- Add panko crumbs and fried onions, and toast until golden brown.
- Remove from heat and stir in chives.
- Pour toasted crumbs over dip in an even layer and serve with chips, crostini, crudité, pretzels, etc.
