Ingredients

  • 2 ounces gin
  • 1 ounce freshly squeezed lemon juice
  • 1 ounce simple syrup
  • 4-5 cucumber slices
  • Club soda
  • Mint sprigs for garnish

Instructions

  1. Muddle cucumber slices, lemon juice, and simple syrup in the bottom of a shaker.
  2. Add gin and ice to shaker; then shake until chilled and well mixed.
  3. Strain over fresh ice into a tall highball glass.
  4. Then top with club soda and garnish with the mint sprig.

Spicy Cucumber Mint Margarita

Ingredients

  • 2 1/2 ounces reposado tequila
  • 1/2 ounce orange liqueur
  • 2 ounces key lime juice
  • 1/2 cup chopped cucumber
  • 2 tablespoons sugar
  • 6 mint leaves, chopped
  • 2 dashes Tabasco hot sauce
  • 2 cucumber slices, for garnish
  • Coarse salt, for optional rim

Instructions

  1. Begin by rimming two glasses with lime juice and salt.
  2. Add tequila, orange liqueur, key lime juice, chopped cucumber, sugar, mint, Tabasco, and ice to a blender and pulse for 1 minute.
  3. Pour equally into the prepared glasses.
  4. Garnish with a cucumber slice before serving.

Watermelon Cucumber Cooler

Ingredients

  • 1 1/2 ounces gin
  • 1 1/2 ounces fresh watermelon juice
  • 1/2 ounce simple syrup
  • 3/4 ounce freshly squeezed lime juice
  • 3 cucumber slices
  • 1 1/2 ounces soda water
  • 1 pinch kosher salt

Instructions

  1. Place two slices of cucumber in a cocktail shaker and muddle well.
  2. Add the gin, simple syrup, watermelon, lime juices, and salt to the shaker. Then fill with ice and shake vigorously for 30 seconds.
  3. Strain into a highball glass filled with ice and top with soda water.
  4. Garnish with a cucumber slice just before serving.

  • 1½ ounces white rum
  • 3 cucumber slices
  • 2 lime wedges
  • 1 teaspoon raw sugar
  • Club soda

Instructions

  1. Muddle lime wedges, cucumber slices, and sugar in the bottom of a glass.
  2. Fill glass with ice and pour in rum. Then top with club soda.
  3. Gently stir to mix.
  4. Garnish with cucumber and lime slices before serving and enjoy.

Cucumber Vodka Soda (Recipe Makes a Pitcher)

Ingredients

  • 1/2 cup vodka
  • 1 1/2 cups fresh cucumber juice
  • 1/2 cup fresh lime juice
  • 1/4 cup simple syrup
  • 1 to 2 cups cold seltzer water
  • Lime and cucumber slices for garnish

Instructions

  • Add cucumber juice, lime juice, vodka, and simple syrup to a large pitcher and stir with a large spoon to mix. Then place the pitcher in the refrigerator for at least 1 hour.
  • Before serving, pour in seltzer water 1 cup at a time.
  • Taste and add more if desired.
  • Garnish glasses with lime wedges and cucumber slices to serve.
