Cucumber Collins
Ingredients
- 2 ounces gin
- 1 ounce freshly squeezed lemon juice
- 1 ounce simple syrup
- 4-5 cucumber slices
- Club soda
- Mint sprigs for garnish
Instructions
- Muddle cucumber slices, lemon juice, and simple syrup in the bottom of a shaker.
- Add gin and ice to shaker; then shake until chilled and well mixed.
- Strain over fresh ice into a tall highball glass.
- Then top with club soda and garnish with the mint sprig.
Spicy Cucumber Mint Margarita
Ingredients
- 2 1/2 ounces reposado tequila
- 1/2 ounce orange liqueur
- 2 ounces key lime juice
- 1/2 cup chopped cucumber
- 2 tablespoons sugar
- 6 mint leaves, chopped
- 2 dashes Tabasco hot sauce
- 2 cucumber slices, for garnish
- Coarse salt, for optional rim
Instructions
- Begin by rimming two glasses with lime juice and salt.
- Add tequila, orange liqueur, key lime juice, chopped cucumber, sugar, mint, Tabasco, and ice to a blender and pulse for 1 minute.
- Pour equally into the prepared glasses.
- Garnish with a cucumber slice before serving.
Watermelon Cucumber Cooler
Ingredients
- 1 1/2 ounces gin
- 1 1/2 ounces fresh watermelon juice
- 1/2 ounce simple syrup
- 3/4 ounce freshly squeezed lime juice
- 3 cucumber slices
- 1 1/2 ounces soda water
- 1 pinch kosher salt
Instructions
- Place two slices of cucumber in a cocktail shaker and muddle well.
- Add the gin, simple syrup, watermelon, lime juices, and salt to the shaker. Then fill with ice and shake vigorously for 30 seconds.
- Strain into a highball glass filled with ice and top with soda water.
- Garnish with a cucumber slice just before serving.
Cucumber Caipiranha
Ingredients
- 1½ ounces white rum
- 3 cucumber slices
- 2 lime wedges
- 1 teaspoon raw sugar
- Club soda
- Cucumber and lime slices for garnish
Instructions
- Muddle lime wedges, cucumber slices, and sugar in the bottom of a glass.
- Fill glass with ice and pour in rum. Then top with club soda.
- Gently stir to mix.
- Garnish with cucumber and lime slices before serving and enjoy.
Cucumber Vodka Soda (Recipe Makes a Pitcher)
Ingredients
- 1/2 cup vodka
- 1 1/2 cups fresh cucumber juice
- 1/2 cup fresh lime juice
- 1/4 cup simple syrup
- 1 to 2 cups cold seltzer water
- Lime and cucumber slices for garnish
Instructions
- Add cucumber juice, lime juice, vodka, and simple syrup to a large pitcher and stir with a large spoon to mix. Then place the pitcher in the refrigerator for at least 1 hour.
- Before serving, pour in seltzer water 1 cup at a time.
- Taste and add more if desired.
- Garnish glasses with lime wedges and cucumber slices to serve.
