‘Tis the season for simple, easy-to-make meals. When the weather is too cold to go out, and the days feel long, cooking an involved meal goes out the window. Don’t get me wrong—I love an intimate winter dinner party with hearty dishes, chic glassware, and fabulous cocktails as much as the next girl. But when the workday ends, a simple dinner recipe with minimal cooking time is what I’m reaching for. There are lots of different meals that I can whip up in no time, but I always come back to a smoked sausage recipe.
Packed with flavor, simple to cook, and extremely versatile, smoked sausage is a pantry staple that no home cook should be without. By design, sausages are made to be a one-and-done meal. Whether you cook them up and serve them in a bun, sandwich style, or use them to create a savory skillet meal, they are the epitome of quick and easy.
There are even meat options for different preferences or vegetarian styles to get creative with. For those who don’t eat pork, smoked beef sausages are a near-identical substitute. Chicken sausages are another option that comes in different flavors to match or enhance those in your dish. Sausage might quite literally be the unsung hero of quick cooking. Smoked Sausage Skillet
Ingredients
- ¼ cup olive oil
- 2 cloves garlic
- 1 package Smoked Sausage
- 1 large red bell pepper
- 1 small yellow onion
- 1 package frozen broccoli
- ½ cup chicken broth
- ½ cup tomato sauce
- 2 cups instant rice
- ½ cup shredded mozzarella cheese
Instructions
- Add olive oil and sliced garlic to a large skillet.
- Slice smoked sausage into diagonal slices and add to pan.
- Cook until sausage is browned and ingredients are fragrant.
- Add sliced pepper, onion, thawed broccoli, chicken broth, and tomato sauce to skillet and simmer until the vegetables are tender.
- Cook rice accordingly.
- Stir cooked rice into the skillet.
- Sprinkle with shredded cheese and serve.
Sausage with Potatoes & Kale
Ingredients
- 1 medium potato
- 1 smoked spicy Italian sausage
- 1 small red onion
- 2 cups chopped dinosaur kale
- 2 teaspoons extra-virgin olive oil
- 1 lemon
- Salt to taste
- Chopped parsley for garnish
Instructions
- Heat oil in a cast iron skillet and cut potatoes and sausage to desired size.
- Add potatoes and sausage slices to skillet and sprinkle with salt.
- Cook until ingredients are browned on one side, then flip to cook the other side.
- Gently move potatoes and sausage to one side of the skillet and add kale.
- Season with salt and stir occasionally until kale has begun to wilt.
- Add sliced onions to skillet mixture and simmer until fragrant.
- Garnish with a squeeze of lemon and chopped parsley before serving.
Breakfast Casserole with Smoked Sausage
Ingredients
- Slices white bread
- 6-8 Smoked sausage links
- 4 eggs
- 1 teaspoon mustard
- 1 teaspoon Worcestershire sauce
- 2 cup milk
- 1/2 cup swiss cheese, grated
Instructions
- Slice smoked sausage into thick circles and sauté in a skillet until browned.
- Add slices of bread to baking dish.
- Add cooked sausage pieces on top of the bread.
- Crack and beat eggs in a separate bowl.
- Add eggs, mustard, Worcestershire sauce, and milk to a blender and pulse until well mixed.
- Sprinkle half of the grated cheese on top sausage and bread.
- Pour egg mixture into the baking dish over the sausage and bread.
- Cover with plastic wrap and refrigerate overnight.
- Bake the next day at 350 degrees for 30 minutes or until the middle is solid and the top is brown.
- Allow to cool before serving.
