The way she perfectly positions the melted cheeses, caramelized pepper and onions, and fluffy eggs creates more than just breakfast — it’s a warm reminder of family, tradition, and holiday joy.

Christmas Sausage Breakfast Casserole

Ingredients

  • 1 pound breakfast sausage
  • 8 slices bacon, chopped
  • 1 pound ham, diced
  • 1 large yellow onion, chopped (2 cups)
  • 2 red bell peppers, diced (2 cups)
  • 8 large eggs
  • 2 cups whole milk
  • 2 teaspoons Dijon mustard
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 4 slices white bread, cubed (about 5 cups)
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • Cooking spray
  • Green onions for garnish

Instructions

1. Cook bacon in a large skillet until crispy. Remove and set aside.
2. In the same skillet, brown breakfast sausage over medium heat. Remove and set aside.
3. Sauté diced ham until lightly browned.
4. In the remaining fat, cook bell peppers and onions until tender, about 5-7 minutes.
5. Whisk together eggs, milk, Dijon mustard, salt, and pepper in a large bowl.
6. Fold in the bread cubes, all meats, and 2 cups of the mixed cheeses.
7. Coat a 9×13 baking dish with cooking spray. Add the egg mixture.
8. Top with remaining cheese, cover with foil and refrigerate overnight.
9. Preheat oven to 350°F. Remove foil and bake for 45-50 minutes until golden and set.
10. Let rest for 10 minutes before serving. Garnish with green onions.
