As someone who loves to cook, I could spend hours in the kitchen mixing up a delicious meal. But reality never ceases to remind me that time is a precious commodity. Busy workweeks and evening events mean I don’t always have time to linger in the kitchen just to put together a hot meal. That’s where this summer sheet pan dinner comes into play. While sheet pan meals aren’t new to me, I’ve found this combination is perfect for BBQ season. It combines blackened salmon, smoked sausages, corn on the cob, and charred vegetables for a complete meal.
As a Marylander, the combination of seafood, sausage, and corn is standard for summer, and with this recipe, I can have the flavors without the work (or mess) of a seafood boil. Plus, it’s adaptable and can work with a variety of items, such as shrimp and asparagus or lobster tails and potatoes. Sheet pans often don’t receive the praise they deserve. However, like your casserole dish or cast iron skillet, it’s the perfect medium for a one-stop-shop meal. Whether you’re feeding a full house or need a quick meal for two, this recipe is a great option for the warmer months ahead.
Summer Sheet Pan Dinner
Ingredients
- 1 salmon filet
- 1 ear of corn
- 1 small head of broccoli
- Mini peppers
- Smoked chicken sausage (or kielbasa)
- 1 teaspoon butter, softened
- Extra virgin olive oil
- Sea salt and black pepper to taste
Blackened Seasoning Blend
- 1 1/2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon ground dried thyme
- 1 teaspoon ground black pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
Instructions
- Line your sheet pan with aluminum foil and set aside.
- Combine the ingredients for the blackened seasoning in a small bowl, stirring until well mixed.
- Rinse salmon and place on a large cutting board or plate.
- Lightly season the salmon with salt and pepper, then add a generous amount of the blackened seasoning and pat into the filet with your hands.
- Place the seasoned filet on the sheet pan.
- Shuck and clean the corn, then rinse the vegetables.
- Massage the softened butter onto the corn and season with blackened seasoning, then place on the sheet pan.
- Place cleaned broccoli in a small bowl and add the EVOO, along with salt and pepper to taste. Stir until evenly coated, then spoon onto the sheet pan.
- Cut the sausages at an angle and arrange on the sheet pan.
- Add mini peppers to open spaces on the pan.
- Place the full pan in the oven and roast at 350° F until salmon is cooked through and vegetables are charred.
