Classic Pan-Seared Scallops
Ingredients:
- 1 pound large sea scallops
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 lemon
- Fresh parsley for garnish
Instructions:
1. Pat scallops completely dry with paper towels.
2. Season both sides with salt and pepper.
3. Heat oil and butter in a large pan over high heat.
4. Once pan is very hot, add scallops.
5. Sear for 2-3 minutes on each side until golden brown.
6. Squeeze fresh lemon juice over scallops.

Less is more when it comes to seafood pasta in my opinion. As long as you cook the scallops right, you’re in business. The most important part when searing scallops is patience! Don’t move them around; the stillness and sticking to the pan is how they char nicely. Place those golden babies on a bed of pasta that’s been cooked in a white wine, garlic, shallot, lemony parsley sauce and you have yourself a meal that you’ll devour. Ingredients: 8 oz pasta 1 lb scallops 2 tbsp butter 2 tbsp olive oil 10 cloves garlic 1 shallot 4 tbsp butter ¼ cup parsley, plus more for garnish ¼ cup dry white wine Juice of one lemon Salt to taste Pepper to taste ¼ cup shredded Parmesan Red flakes Instructions: 1. Boil 8 oz linguini in salted water according to package instructions. Reserve 1 cup of pasta water. 2. When you drop the pasta in the water, start on the scallops. Pat the scallops with a paper towel to pick up my moisture. Season the scallops with salt and pepper. 3. Heat a pan to medium high and add the oil and 2 tbsp butter. Add the scallops to the heated pan, placing each one down in clockwise order. Allow to cook, untouched, for 90 seconds to two minutes, or until the scallop has seared. Flip them in the same clockwise order you placed them down and allow to cook for another 1-2 minutes until seared on the second side. Remove from the pan and set aside. 4. Reduce heat to medium and add 4 tbsp butter to the same pan. Once melted, add the shallots and garlic. Sautee for 2 minutes, then add the white wine, salt, and pepper. Allow the wine to reduce about 3 minutes. Add the parsley, and lemon juice and stir to combine. Option to add a few scallops into the sauce here, or to reserve them all to place on top. Add the pasta to the pan, along with ½ cup of the reserved pasta water. Mix thoroughly, so all noodles are coated in the sauce. 5. Remove from heat and plate. Garlic Butter Scallop Pasta
Ingredients:
- 1 pound scallops
- 8 oz linguine
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup white wine
- 1/2 cup heavy cream

- Red pepper flakes (optional)
Instructions:
